Mango, coconut and lime healthy granola + simple yogurt parfait

This homemade, healthy tropical granola is the perfect breakfast to spice up your mornings! If you are struggling to eat breakfast, this easy recipe will become your best friend!

No more skipping breakfast!

Let’s be honest, we all love to sleep. I know waking up early in order to eat something before having to rush out can seem annoying, but it doesn’t have to be! Eating breakfast can be super simple and enjoyble, too!

There is no need to buy those expensive, store-bought cereals which usually have more than plenty of sugar added to them. In order to have a good-quality breakfast all you have to do is prepare yourself. This healthy tropical granola takes under 1 hour to prep and will last you throughout the whole week, even longer! You are saving money and saving the enviroment by not buying all of those packaged pre-made cereals.

Tropical vibes!

I totally feel like I am in the tropics, sipping my coffee and enjoying this granola with some coconut milk or yogurt- both are sooo good! 

In the recipe I used coconut chips, banana chips and chopped dried mango. That would be delicious just as is. But with the addition of lime zest- OH WOW! The flavors just burst.

Besides the dried fruits there is lots of protein and healthy fats rich nuts and seeds- so important for a balanced diet! You can use whatever you have on hand: almonds, walnuts, cashews, sunflower seeds, flax seeds, pepitas, …

I was inspired to recreate this recipe by a dear, Croatian food blogger and a nutritionist Iva from the Healthy Little Tooth blog. Thank you for the inspiration dear! I made some alterations and now I am sharing the recipe with all of you.

Nutrient-dense, satisfying and delicious!

Did I mention why this granola is the perfect breakfast

Firstly, it contains sooo many different nutrient dense foods!

  • oats: contain fiber to slow down digestion and and increase satiety, protein and healthy fats
  • mango: vitamin A, C, B6, folate and fiber
  • banana: high in fiber and potassium (but don’t use too much of it- it is high in sugars 😉 )
  • coconut, nuts and seeds: healthy fats, fiber, protein source + vitamin E (almond), iron (cashews), alpha linoleic acid (flax, walnut)- they make you feel full 

It is incredible how much nutrition there is in this healthy tropical granola in comparison to sugary cereals on the shelves in the stores.

Secondly, it takes you exactly 1 minute! to make yourself a wholesome breakfast in the morning. And to make the granola all you need is one bowl, a couple of ingredients (feel free to adjust it to your taste) and 30 minutes- that is it! Now, who said they don’t know how to make it or that they can’t be bothered? It takes you less time to make the granola, then to go to the store and buy it! 🙂

And lastly, I promise you this tastes incredible! The oats give it a lovely crunch. There are toasted nuts and seeds for the extra texture and bite. And the chewy, delicious mango, sweet and brittle banana chips plus the crispy coconut chips! Don’t forget about that zing from the limes… So, so delicious!

About the healthy tropical granola & yogurt parfait

I thought it would be nice if I included my favorite way of eating this yummy granola, or one of my favorite ways. I just can’t decide! 😉

The parfait is a completely optional step and you can choose whichever yogurt you prefer. Wherther it is coconut, plain, Greek, … , it is destined to be delicious! Maybe go crazy and throw in some chia seeds, why not? and fresh lime juice? Even better. 

Ok, ok! Surely you are getting real excited about the recipe now, so I’m just gonna cut to the case. Here comes your new staple homemade granola recipe! Wholesome, homemade granola with a tropical twist!

Ingredients

    Basic ingredients
  • 3 cups of rolled oats
  • 3 tbsp of honey/ maple syrup
  • 2 tbsp of coconut oil
    Extras
  • 1/4 cup od ground flax seeds
  • 1 cup of mixed chopped nuts/seeds {almonds, cashews, sunflower, walnuts, ...}
  • 1/4 cup of banana chips
  • 1/2 cup of chopped dried mango
  • 1/2 cup of coconut chips
  • zest of 1 lime + (juice for the yogurt)*
    Yogurt parfait* (makes 2)
  • *optional
  • 1 and 1/2 cups of yogurt
  • 2 tbsp chia seeds
  • juice of 1 lime
  • 1 banana
  • the granola

Instructions

  1. Preheat the oven to 180°C/356°F.
  2. Combine the oats, sweetener and oil inside a large bowl.
  3. Add in the chopped nuts and seeds, ground flax seeds as well as the lime zest.
  4. Bake for 20 minutes, stirring half-way. It is ready once it has turned golden and crispy.
  5. After it has cooled a bit, add in the dried fruits and coconut chips.
  6. Leave to cool completely before storing in an airtight container.
  7. *To make the parfait, combine the chia seeds and lime juice with yogurt. Layer the granola, then the yogurt mix, sliced banana, more granola into 2 glasses and finally top the parfait with a few more banana slices. Enjoy!

Notes

Keep it in an airtight container for up to 3 weeks.
